Gluten Free Oatmeal Cookies
Ingredients:
- 1-1/2 cups GF All Purpose Baking Flour
- 1 tsp Xanthan Gum
- 2 Eggs large
- 1 tsp Ground Cinnamon
- 1/2 tsp Sea Salt
- 1 tsp Baking Soda
- 1 tsp Vanilla Extract
- 1/2 cup Sugar
- 1 cup Brown Sugar
- 1 cup Unsalted Butter (softened)
- 3 cups Gluten Free Rolled Oats
- 1 cup RAISINS – NATURAL UNSULFURED
Directions
Preheat oven to 350°F. Beat butter and sugars together until smooth. Add vanilla and eggs; beat well. In a separate bowl, blend flour, cinnamon, baking soda, salt and Xanthan Gum. Stir flour blend into wet ingredients. Add oats and raisins and mix well. Drop rounded tablespoons of dough onto un-greased cookie sheet. Bake for 10 – 12 minutes, or until golden brown. Cool one minutes then transfer to wire rack. Makes about 4 dozen cookies.
*Eggless Option: Mix together 2 Tb. Flaxseed Meal with 6 Tb. of water and let sit for a minute. Add to recipe as you would the eggs.

In high amounts (> 15g), it can upset your stomach but only 1g is required to stabilize a 200 ml liquid. It’s great for making low carb alternatives of baked goods (breads and cakes) and even desserts like ice cream. Urban platter provides a very high amount for a relatively low cost, which is why I’m giving it 5 stars. Just be careful with the amount you use, because if you use too much you might ruin whatever you’re attempting to make with this.
Nice product for shake thickness
Cannot be used for making icecream and moth and stomach feels a little weird after consuming. Thickens well tho
