Vegan Pound Cake

One of the most basic and essential recipes in any baking portfolio is the Pound Cake! Here is a simple recipe that will propel you towards baking mastery!

  • Preheat the oven to 180C and coat a loaf pan with vegan butter and sugar.
  • In a small bowl, add the OatWow and apple cider vinegar and mix well. This will curdle the milk slightly. Once curdled, set this mixture aside.
  • In a large bowl, add the flour and baking powder and mix well.
  • In a separate bowl, add the softened vegan butter and brown sugar.
  • Using an electric beater, beat the butter and sugar together until light, pale, and fluffy.
  • Pour the OatWow mixture and beaten butter into the flour and mix well to combine into a batter.
  • Pour the batter into the prepared mould and bake for 25 to 30 minutes.
  • To check if the pound cake is completely baked, insert a wooden skewer in the center of the cake and take it out.
  • If there is batter stuck to it, it needs to bake for longer. If the skewer comes out clean, the cake is fully baked and can be taken out.
  • Once you have taken the cake out of the oven, cool it on a rack before demoulding.
  • Once the cake is fully cool, demould and enjoy with vegan whipped cream and strawberry compote.
