Sesame and Olive Oil Loaf Cake

Sesame and Olive Oil is a combination that is seldom seen in desserts. But when made well, the balance of the nutty sesame and the earthy olive oil works SO well in desserts and especially cakes!

  • In a loaf pan, add a few drops of olive oil and wipe with a paper towel. Dust the pan lightly with flour and set aside. Preheat your oven to 180C
  • In a large bowl, add the cake flour, sugar, baking powder, and salt.
  • Add these dry ingredients to a sifter and sift into another bowl or on a parchment paper.
  • In a separate bowl, add the olive oil, OatWow, flax egg, tahini paste, vanilla extract, and the lemon zest.
  • Using a whisk, combine the wet ingredients extremely well, until homogenous.
  • Add the wet ingredients into the dry ingredients and combine lightly.
  • Make sure to not overmix as this will result in a hard texture.
  • Pour the batter into the prepared loaf pan and sprinkle with the toasted sesame seeds.
  • Bake in the oven for 30 minutes. Once it is baked, remove from the oven and cool it down on a wire rack.
