Pilau Rice
This Dum cooked aromatic rice, adds more life and flavour to your palate. It is best enjoyed as an accompaniment to any type of curry, Dal or any other Indian staple.

Ingredients
- 2 Cups Basmati Rice
- 4 Cups Water
- 2 Tbsp Vegan Ghee
- 1 Tsp Turmeric Powder
- 1 Tsp Red Chilli Powder
- 2 Green Cardamom Pods
- 4 Cloves
- 2 Star Anise
- 1/2 Mace shell
- 2 Tsp Cumin Seeds
- Salt
Instructions
- Wash the rice thoroughly 3-4 times until the water is clear.
- In a pressure cooker add the ghee and whole spices and let it cook for 2-3 minutes on a low flame.
- Add the rice in the cooker along with the turmeric, red chilli powder & salt. Stir well until the rice is slightly toasted, about 2 minutes.
- Add in hot water and cover the cooker. Allow the rice to cook until the first whistle blows. After the whistle has blown, let the rice rest in the pot for 5 minutes.
- Open the lid and fluff with a fork. Ready to serve!
