Pesto Chickpea Salad
When you use our perfectly plant-based Basil Pesto, you don't need much else to make your food taste delicious! This Chickpea Salad that is flavoured with our Pesto is simple, elegant, and highly nutritious! It sis the perfect topping for toasts, crackers and even as a filling for quick wraps!

Ingredients
- 1 can Chickpeas in Brine (drained and dried)
- 1/2 cup Yellow Bell Pepper (chopped)
- 1/2 cup Red Bell Pepper (chopped)
- 1/4 cup Corn (boiled)
- 1/4 cup Green Olives (sliced)
- 1/4 cup Black Olives (sliced)
- 2 tbsp Basil Pesto
- 1 tbsp Lemon Juice
- Salt and Pepper (to taste)
Instructions
- In a large bowl, add all of the above mentioned ingredients and mix well.
- Make sure to mix enough so that all of the chickpeas and veggies are completely coated.
- Enjoy your chickpea salad as is or top off sourdough toast or crackers with it!
