  • Soak the noodles in warn water for 10 minutes until softened and drain completely.
  • Start by washing the beansprouts throughly. Prep the tofu, red onion, spring onion (into 2-inch long pieces), chop the roasted  peanuts coarsely and Set aside.          
  • For the sauce, take a mixing bowl, combine all the liquid ingredients for sauce and mix well until tamarind and palm sugar has dissolved. 
  • In a wok, add 1 Tbsp cooking oil, add tofu, red onion and chilli flakes, cook for 2-3 minutes.
  • Add in the noodles and prepped sauce. Stir fry until noodles absorb sauce completely. Add some water to increase the cooking time. Now add bean sprouts, spring onion & peanuts. Toss everything together for about 2 minute.
  • Serve in a plate, Garnish with chopped peanuts, dried Thai chilli powder, lime & some more beansprouts.
