Pad Thai
Pad Thai is characterized by rich, vibrant flavors, from funky, to sour , to sweet. Pad Thai recipes vary, but there's almost always a base of flat rice noodles, along with other condiments.

Ingredients
- 200 g Flat Rice Noodles
- 150 g Firm Tofu (Cubed)
- 1 Red Onion (Sliced)
- 3 Spring Onion (Sliced)
- 50 g Bean Sprouts
- 2 Tbsp Chilli Flakes
- 3 Tbsp Peanuts (Crushed)
- 1 Lime (Wedges)
- Fried Garlic Bits
- 2 Tbsp Vegan Fysh Sauce
- 1 Tbsp Light Soy Sauce
- 1 Tbsp Coconut Palm Sugar
- 1 Tsp Thai Red Chilli Sauce
- 1 Tbsp Tamarind Concentrate
Instructions
- Soak the noodles in warn water for 10 minutes until softened and drain completely.
- Start by washing the beansprouts throughly. Prep the tofu, red onion, spring onion (into 2-inch long pieces), chop the roasted peanuts coarsely and Set aside.
- For the sauce, take a mixing bowl, combine all the liquid ingredients for sauce and mix well until tamarind and palm sugar has dissolved.
- In a wok, add 1 Tbsp cooking oil, add tofu, red onion and chilli flakes, cook for 2-3 minutes.
- Add in the noodles and prepped sauce. Stir fry until noodles absorb sauce completely. Add some water to increase the cooking time. Now add bean sprouts, spring onion & peanuts. Toss everything together for about 2 minute.
- Serve in a plate, Garnish with chopped peanuts, dried Thai chilli powder, lime & some more beansprouts.
