Beloved across France & Italy, the base ingredients of tapenade are olives and capers that are finely or blended. Then olive oil is added gradually until the mixture becomes a paste.

- In a small saucepan, add the olive oil and garlic. Let it slow cook for 3-5 minutes on a low flame. Keep aside to cool once the garlic has softene
- Start by zesting a tsp of lemon (1 tsp worth), remove the olive piths and coarsely cut the other ingredients to help with the blending process.
- In a blender, measure and add in all the ingredients and blend until a semi smooth like consistency is reached. Add in the garlic oil mixture slowly as it is blending to emulsify the tapenade.
- Once smooth, store in a glass jar and serve with bread or add it to sandwiches or incorporate it any other way you like.
