Japanese Matcha Cookies

There are very few ingredients in the world with a color as vibrant and delightful as Matcha. These beautiful cookies are delicious, crunchy because of hazelnuts and delectable because of chocolate chips! Make sure to have tall glass of cold milk handy because these cookies are dunk-worthy!

  • In a large bowl, add the light brown sugar, powdered sugar, coconut oil, almond milk and vanilla extract.
  • Using a whisk, mix this mixture well until the sugar is completely dissolved.
  • Place a fine mesh strainer over the bowl and add the flour, baking powder, baking soda, salt and Matcha Powder.
  • Sift all of the dry ingredients into the wet ingredients. Using a rubber spatula, combine all of these ingredients together until a cookie dough like mixture is formed.
  • Add the chopped hazelnuts and chocolate chips to the dough and mix well to combine again.
  • Using an ice cream scoop, portion the dough into about 40g balls and refrigerate on a baking tray for 1 hour.
  • Preheat the oven to 180 C. Once the cookies are cold and have hardened up, bake them for 15 to 20 minutes.
  • Enjoy these beautiful and vibrant cookies with a chilled glass of milk.
