Harissa
Harissa is a fiery and garlicky Tunisian hot chili pepper paste, that's traditionally served alongside bread, stews and couscous dishes. It is widely used as a marinade for proteins in some regions.

Ingredients
- 40 g Dried Red chillies / Baklouti peppers
- 1 Tbsp Tomato Paste
- 1 Tsp Cayenne Pepper Powder
- 1 Tsp Chilli Flakes
- 1 Tsp Caraway Seeds
- 1 Tsp Coriander Seeds
- 1 Tsp Cumin Seeds
- 1 Tsp Smoked Paprika
- 3 Tbsp Extra Virgin Olive oil
- 1/2 Lemon Juice
- 3 Garlic Cloves
- Salt & pepper
Instructions
- Place the dried red chillies to boil in salted water for 5 minutes on a medium high flame. Once softened, deseed the chillies and kept it aside.
- Add the olive oil in a small pan along with the minced garlic, chilli flakes and tomato paste. Cook this on a low flame for 5-7 minutes and let it cool down.
- Lightly roast the cumin, caraway and coriander seeds on a stove for 3 minutes on a medium low flame and grind into a fine powder.
- Add all the ingredients to the blender and let it process for 3-4 minutes until a thick paste like consistency is achieved. Here, water can be added to smoothen the paste out even more.
- Store in a mason jar and place it in the fridge.
