French Coconut Macarons

When someone hears the word macarons, they are transported to the banks of the seine with a cafe au lait in one hand and beautiful pastel macarons on the other. This recipe for macarons that use coconut in all forms has somehow gotten lost through the ages.

  • In a large bowl, add the ground coconut flakes, dried dates powder, cornstarch, and salt.
  • Mix well to combine all of the dry ingredients.
  • Add the coconut milk and mix all of the ingredients well until a soft cookie dough type mixture is formed.
  • Portion the macaron dough into nine equal portions.
  • Preheat the oven to 180 C and line a baking tray with parchment paper.
  • Place the macaron cookie portions on the baking tray and bake in the oven for 12 minutes.
  • Remove from the oven and let the macarons cool down completely.
  • Once cooled enjoy these delicious and coconut-y cookies with coffee first thing in the morning!
