Earth Day Cheesecake Bars

Instructions

Making the Cheesecake Crust

  • In a food processor, add the walnuts and date paste. Process until a crumbly mixture is formed.
  • Line a square cake tin with baking paper and coat lightly with oil.
  • Transfer the walnut and date mixture to the prepared cake tin and spread out evenly over the bottom of the tin. Refrigerate for 1 hour.
  • As our cheesecake crust is setting, We will begin to make our filling. We will be making 2 colored fillings, blue and green, both using natural colors!

Making the Blue Color Filling

  • In a small pot, add water and the Blue Butterfly Pea Flower tea and bring to a boil.
  • Strain the tea and set aside to cool.
  • In a high speed blender, add soaked cashews, coconut oil, maple syrup, and the Blue Butterfly tea decoction.
  • Blend until it is completely smooth and fluffy. Transfer to a bowl and set aside.

Making the Green Color Filling

  • Clean the blender and add soaked cashews, coconut oil, maple syrup, coconut cream and matcha powder.
  • Blend until it is completely smooth and fluffy. Transfer to a bowl and set aside.

Assembling the cheesecake

  • Once the crust is completely set, pour the blue cheesecake filling and spread it evenly.
  • Using a spoon, add the green colored filling over the blue in large dollops.
  • Using the back of a spoon, swirl the green filling around to make a marble like effect.
  • Set the cheesecake in a freezer for 4 to 5 hours.
  • Once the filling is fully set, cut into bars of your desired shape using a knife.
