Curry Udon Noodles
This one pot Udon noodles are the best thick and chewy, infinitely slurpable, and even easier to cook and eat.

Ingredients
- 100 g Flat Udon Noodles
- 50 g Soya Meat Tikka (Coarsely cut )
- 100 ml Preserved Noodle water
- 50 ml Coconut Milk
- 1/2 White Onion (Thin slices)
- 1/2 Carrot (Thin matchsticks)
- 1 Tbsp Dark Sesame Oil
- 1 Tbsp Broth Powder ((Bouillon))
- 1.5 Tbsp Oriental Curry Powder
- 1 Tbsp Green Onion (Chopped)
- 1 Tsp Fried Garlic bits
Instructions
- In a pot, add some water for the noodles to boil. To that, add in the bouillon & broth powder. Boil the noodles until half cooked, about 3 minutes. Oil the noodles gently and set aside.
- In a wok, start by frying the white onion in some sesame oil. After a minute add in the carrot. To this, spoon in the curry powder and let the vegetables cook for a few minutes.
- Now add the preserved noodle water, followed by the coconut milk. Cook on a medium low flame until a sauce is formed.
- Throw in the noodles and cook for a few minutes until it all comes together. Lastly, serve in a small bowl and garnish with the green onion and fried garlic bits.
