This is an antipasto from Italy consisting of grilled bread rubbed with garlic, topped with a concoction of tomatoes, served cold.

- Start by, dicing the tomatoes and remove the excess liquid out, by squeezing the cut tomatoes.
- In a bowl, toss together the tomatoes, basil, olive oil (1.5 Tbsp), oregano, salt, and pepper. Let it sit for 5 minutes.
- In a small bowl, pour the remaining olive oil and add the minced garlic to that. Use a silicone brush to cover the sliced baguette with the garlic oil and lightly toast it in the oven for 3-4 minutes.
- Once toasted, Start placing the tomato mixture onto the bread and serve with a garnishing of your vegan cheese.
