Blue Butterfly Pea Iced Tea🦋
This Blue Butterfly Pea Flower Tea recipe can be enjoyed either hot or cold and tastes delicious with lemon or lime. It is known for its mesmerising colour changing properties, from an indigo blue to a purple-pink!

- In a pot, place the water to boil and add in the tea, let it boil on a medium low flame for 5 - 7 minutes.
- Once the water has absorbed the deep blue colour, strain the tea from the water and add in the coconut palm sugar to the hot tea.
- Place the tea in the fridge to cool down. Then squeeze lemon juice into the tea giving it a light purple colour.
- In a glass, add some crushed ice and a couple of lemon circles inside the glass as well as a wedge on the rim.
