Erythritol is pretty great as far as sugar alternatives go. It’s nearly perfect and there’s only a few reasons I’m giving it 4 stars out of 5.
1. It doesn’t have any aftertaste, but it does leave a cooling effect that can sting the tongue when used to create anything that isn’t baked (like a cake) or cooled (like an ice cream). I made some chocolate sauce to accompany my dessert and when eaten by itself, it stung my tongue. It’s more interesting than off-putting for me, but may not be that great for someone else.
2. Using it in high amounts can bloat and/or upset your stomach. 50g is usually the limit for adults. It’s not a 1:1 substitute for sugar, so you would need to use higher amounts of it to recreate dishes and make them taste as similar to the original as possible. It’s also quite pricey, so it gets over very quickly.
The best way to combat the above disadvantages would be to use it along with a different sweetener like monk fruit extract or agave nectar, since they’re both much sweeter than sugar. Use a drop or two of them along with erythritol as a 1:1 substituent for sugar. This product is expensive, but would last longer when used like this and would be more cost-effective to you.
