Amazing Superfood Trail Mix Recipes - Urban Platter

1) Rice Trail Mix


For Salad

  • 1 cup dry brown rice
  • Urban Platter Vegan Trail Mix

For the Dressing

  • 2 tbsp. vinegar
  • 1 tbsp. lemon juice
  • 1 clove garlic, minced
  • 1 tsp mustard
  • 1 tsp coconut sugar
  • 4 tbsp. olive oil
  • sea salt & fresh pepper, to taste


  1. Cook the brown rice.
  2. Meanwhile in a small jar, add all of the dressing ingredients, shake and set aside
  3. Stir together the remaining ingredient in a large mixing bowl
  4. Drain the rice and rinse well with cold water
  5. Stir the rice with the trail mixture. Shake the dressing again and pour over the rice mixture
  6. Stir really well and serve

2)Trail mix smoothie


  • ¾ Cup chilled unsweetened chocolate almond milk
  • 8 thick frozen banana slices, about 1 medium banana
  • 1/2 Cup Urban Platter Vegan Trail Mix
  • Pinch of sea salt
  • 1 Teaspoon unsweetened cacao powder


Combine all the ingredients in a blender and blend until smooth. Garnish with more trail mix or cocoa powder for extra fun.

3)Granola Bars


  • Urban Platter Vegan Trail Mix
  • ½ cup flaked coconut toasted
  • 1 tablespoon chia seeds
  • ¼ teaspoon kosher salt
  • ½ teaspoon cinnamon
  • ½ cup creamy almond butter
  • cup maple syrup
  • 2 tablespoons coconut oil
  • 1 teaspoon vanilla extract
  1. Line an 8×8” square pan with parchment paper and lightly grease with coconut oil. Set aside.
  2. In a large mixing bowl, stir together the trail mix, flaked coconut, chia seeds, kosher salt, and cinnamon.
  3. Stir together the almond butter, maple syrup, and coconut oil in a small microwave-safe bowl or liquid measuring cup. Microwave the mixture for 30 seconds it should be hot and pour easily. Stir in the vanilla extract.
  4. Pour the almond butter/maple syrup mixture over the dry ingredients and stir until all of the dry ingredients are coated.
  5. Pour the sticky mixture into the prepared pan, even layer in the pan. Cover and place in the refrigerator for at least 1 hour before cutting into granola bars.
  6. You can store the granola bars in a sealed bag or container in the refrigerator for 2 weeks or in the freezer for a few months.
