One day I found two pumpkin seeds.
I planted one and pulled the weeds.
It sprouted roots and a big, long vine.
A pumpkin grew; I called it mine.
The pumpkin was quite round and fat.
(I really am quite proud of that.)
But there is something I’ll admit
That has me worried just a bit.
I ate the other seed, you see.
Now will it grow inside of me?

Preheat oven to 275°. As it heats, microwave butter in 20-second intervals until fully melted.
Toss the seeds in butter to coat them, then in cilantro and taco seasoning. Spread them in an even layer on a baking sheet lined with parchment paper, then cook for 20 minutes. Once they’re out of the oven, drizzle with lime juice, let cool for a few minutes, and serve.
Cinnamon Sugar Pumpkin Seeds
You don’t have to feel guilty about indulging in this sweet snack.
Preheat oven to 350°. As the oven heats, heat butter in the microwave in 20-second intervals until it’s fully melted.
Toss pumpkin seeds in melted butter to coat them, then toss with cinnamon and sugar.
Spread the seeds out on a parchment-lined baking sheet and roast for 25 to 27 minutes, or until lightly golden.
