1) Healthy Beet-Apple Juice

Ingredients

  • 1 apple
  • 3cm cube ginger
  • 1 medium beetroot
  • handful of fresh mint
  • slice of lemon

Method

Blend in all the ingredients in a juicer and serve with a slice of lemon and fresh mint.

2) Beetroot Risotto

Ingredients

  • 1/4 cup fresh cream
  • 1 cup grated beetroot
  • 3/4 cup arborio rice , washed and drained
  • 2 tbsp butter
  • 1/2 cup chopped onions
  • 1 1/2 tbsp finely chopped garlic
  • salt to taste
  • 3 1/2 cups vegetable stock
  • 1/2 cup milk
  • 1 1/2 tsp dried thyme
  • 3/4 cup grated processed cheese

Method

Heat the butter in a deep non-stick pan, add the onions and saute on a medium flame for 2 minutes. Then add the garlic and saute on a medium flame for a few seconds. Add the rice and saute on a medium flame for 2 minutes. Add salt to taste and mix well. Add ½ cup of vegetable stock, mix well and cook on a medium flame for 2 minutes or till the vegetable stock gets evaporated, while stirring occasionally. Repeat step 5 with the remaining 3 cups of vegetable stock. Add the beetroot, milk and thyme, mix well and cook on a medium flame for 5 minutes, while stirring occasionally. Switch off the flame, add the fresh cream and cheese and mix well.

3) Beetroot Rice

Ingredients

  • 3/4 cup grated beetroot
  • 2 cups cooked rice
  • 1 1/2 tbsp oil
  • 1 cardamom
  • 1 clove
  • 1 small stick cinnamon
  • 1 bayleaf
  • 1 tsp cumin seeds
  • 1/2 cup sliced onions
  • 1/2 tsp chilli powder
  • 1/4 tsp turmeric powder
  • 1/2 tsp coriander powder
  • 1/4 tsp cumin seeds powder
  • salt to taste

Method

Heat the oil in a broad non-stick pan, add the cardamom, clove, cinnamon, bayleaf and cumin seeds and saute on a medium flame for a few seconds. Add the onions and saute on a medium flame for another 2 to 3 minutes. Then add the chilli powder, turmeric powder, coriander powder and cumin seeds powder and saute on a medium flame for a few more seconds. Add the beetroot and saute on a medium flame for another 2 minutes. Salt to taste and ¼ cup of water, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally. Add the rice, mix well and cook on a medium flame for 2 minutes, while stirring occasionally. Discard the cardamom, cloves, cinnamon and bayleaf.

4) Beet-Carrot Salad

Ingredients

 For Salad
  • 4 medium beetroots
  • 3 medium carrots
  • 2 tablespoon roughly chopped parsley
  • lemon vinaigrette
For Lemon Vinaigrette
  • 3 tablespoons lemon juice
  • 3 tablespoons olive oil
  • 2 garlic cloves – minced
  • ½ teaspoon black pepper
  • ½ teaspoon salt (or to taste)
For Salad
  1. Boil the beetroot and carrot on medium heat until it can be easily pierced through with a knife.
  2. The skin will easily peel off. After removing the skin of the beetroots and carrots chop them into cubes.
  3. Roughly chop the parsley.
  4. Combine beetroot, carrots with the lemon vinaigrette and serve.
For Lemon Vinaigrette
  1. Mix all ingredients together in a bowl and whisk slightly.

5) Beetroot Chutney 
 
Ingredients
1/2 cup grated beetroot
1 tbsp oil
1/4 tsp urad dal
3 whole dry kashmiri red chillies
4 to 5 curry leaves
1/4 cup grated coconut
salt to taste
 
Method
  • Heat the oil in a broad non-stick pan, add the urad dal, red chillies and curry leaves and saute on a medium flame for a few seconds.
  • Add the beetroot, coconut and salt and saute on a medium flame for 4 to 5 minutes.
  • Remove from the flame and allow the mixture to cool completely.
  • Once cooled, blend in a mixer to a smooth paste using 2 tablespoons of water. Transfer the chutney into a bowl and keep aside.
  • For the tempering, heat the oil in a small pan and add the mustard seeds.
  • When the seeds crackle, pour the tempering over the beetroot chutney.
  • Serve immediately or store in an airtight container.
